In this study, the effect of food supplementation with different level of Dunaliella salina on skin carotenoid level, skin and fins coloration in H. serverus were investigated. One hundred and eighty H. severus weighing 27±0.5g  were randomly divided to four groups in triplicate: Groups 1 (G1) were fed with basal diet, group 2 (G2), group 3 (G3) and group 4 (G4) fed with basal diet supplemented with 50, 100 and 200 ­mg kg-1 D.salina, respectively. Following 6 weeks administration of experimental foods, digital photos were taken from each group and skin samples were taken after euthanasia. Skin beta carotene rate as well as skin and fins coloration pattern were compared among groups (a*, ­b*, Hue, L* and Chroma). Results showed that skin beta carotene rate significantly increased  in G2, G3 and G4 in comparison with control (P<0.05), and the highest rate was 4.06±0.45 mg kg-1 in G4 . There was no significant difference recating to color indicators in skin area between the groups (P>0.05). In the fin area a* value significantly increased in G2 and G3 compare to control also Hue and b* value significantly decreased in G2 and G3 compare to control (P<0.05). Chroma value significantly increased in G3 compare to other groups (P<0.05). No significant difference were observed in L* value between the groups (P>0.05). Regarding to the availability and low cost of D.salina as well as possibility of its mass production, D.salina can be used as an natural source of carotenoid for improving color and carotenoid level in fish.    }, keywords = {Dunaliella Salina,Heros serverus,Color,Beta carotene}, title_fa = {مقایسه‌ی تجویز خوراکی غلظت های مختلف جلبک دونالیلا سالینا Dunaliella salina بر میزان کاروتنوئید پوست و رنگ ماهی سورم ( Heros serverus )}, abstract_fa = {    رنگ ماهی به عنوان یکی از شاخص‌های مهم در بازارپسندی و یکی از فاکتورهای تجاری در آبزی پروری به شمار می‌رود.  در این تحقیق اثر تجویز خوراکی غلظت‌های مختلف جلبک دونالیلا سالینا بر میزان بتاکاروتن پوست، رنگ پوست و باله‌های ماهی سورم (H.serverus) مورد بررسی قرار گرفت.  به این منظور تعداد 180 قطعه ماهی با میانگین وزن (g5/0±27) به 4 تیمار در 3 تکرار تقسیم شدند:  تیمار اول با غذای پایه فاقد جلبک دونالیلا ((G1 و سه تیمار دیگر به ترتیب با غلظت 50 (G2)، 100 (G3) و 200 (G4) میلی‌گرم جلبک دونالیلا سالینا در کیلوگرم خوراک، تغذیه شدند.  بعد از 6 هفته تغذیه از ماهی‌های هر تیمار عکس دیجیتال و نمونه‌ی پوست تهیه گردید.  میزان بتاکاروتن پوست و شاخص‌های رنگ (Chroma, Hue, b*, a*, L* E* و ΔE) بین تیمارها مقایسه گردیدند.  نتایج نشان داد که میزان بتاکاروتن در تمامی تیمارها افزایش معنی‌داری نسبت به تیمار شاهد داشت (05/0P<) و بیش‌ترین میزان بتاکاروتن برابر 45/0±06/4 mg/kg مربوط به تیمار G4 بود.  در ناحیه‌ی‌ تنه و باله شاخص‌های (Chroma, b*, L*) تفاوت معنی‌داری بین تیمارها مشاهده نشد (05/0P>).  در ناحیه‌ی تنه شاخص‌های (a*, ΔE, E*) افزایش و شاخص Hue کاهش معنی‌داری در تیمارهای (G3) و (G4) نسبت به تیمار شاهد نشان داد (05/0P<).  در ناحیه‌ی باله‌ها شاخص‌های E* و a* در تیمارهای (G3) و (G4) افزایش معنی‌داری نسبت به تیمار شاهد داشت (05/0P<).  میزان شاخص EΔ در تمامی تیمارها افزایش معنی‌داری نسبت به تیمار شاهد داشت (05/0P<)، که بیش‌ترین میزان افزایش مربوط به تیمار (G4) بود.  شاخص Hue در تیمار (G4) کاهش معنی‌داری نسبت به تیمار شاهد نشان داد (05/0P<).  با توجه به قیمت مناسب‌، در دسترس بودن و امکان تولید وسیع، از این جلبک می‌توان به عنوان یک منبع کاروتنوئید و ماده‌ای برای بهبود رنگ در ماهی استفاده نمود.}, keywords_fa = {جلبک دونالیلا سالینا,ماهی سورم,رنگ پوست,بتا کاروتن}, url = {https://www.ivj.ir/article_13017.html}, eprint = {https://www.ivj.ir/article_13017_658a94d98d8741086fe21a0e95d0c5df.pdf} }
