These isoflavones are currently of growing interest owing to their beneficial effects on many disorders, including cancer, cardiovascular diseases and osteoporosis. However, there is little information on the antimicrobial effects of these isoflavones. The purpose of the present study was to compare the antimicrobial effects of genistein and daidzein against seven important foodborne pathogens, namely E. coli O157:H7, Listeria monocytogenes, Bacillus cereus, Staphylococcus aureus, Vibrio parahaemolyticus, Salmonella typhimurium, and Cronobacter sakazaki. To achieve this purpose, the effect of different concentrations of genistein or daidzein on the lag phase duration of growing bacteria was evaluated by measuring the optical density of the samples during 24 h at 35 ºC. According to the results of the present study, the lag phase duration of E. coli O157:H7 was not altered significantly in the presence of up to 1000 µM of both the isoflavones (p>0.05). However a significant increase in the lag phase duration of B. cereus, S. aureus and S. typhimurium was observed in the presence of 500 µM of genistein or 1000 µM of daidzein (p<0.05). Furthermore, both isoflavones made a significant increase in the lag phase duration of L. monocytogenes and V. parahaemolyticus in the concentration of 125 µM and also in the lag phase duration of C. sakazakii in the concentration of 1000 µM (p<0.05). In conclusion, in the presence of 1000 µM of genistein and daidzein, the lag phase duration of all the tested bacteria were significantly increased except for E. coli O157:H7.}, keywords = {Genistein,Daidzein,Isoflavone,Lag phase}, title_fa = {مقایسه ی اثر ضدمیکروبی جنیستئین و دایدزئین روی تعدادی از باکتری‌های بیماری‌زای غذایی}, abstract_fa = {    جنیستئین و دایدزئین از جمله ایزوفلاون‌های مهم موجود در سویا می‌باشند که با توجه به فعالیت‌های بیولوژیک زیاد آن‌ها، در سال‌های اخیر مطالعات بسیاری روی آن‌ها انجام شده است.  این ترکیبات، استروژن‌های گیاهی بوده و دارای اثرات حفاظتی در برابر سرطان‌ها، امراض قلبی عروقی و استئوپروز می‌باشند؛ اما در مورد اثرات ضدمیکروبی آن‌ها اطلاعات محدودی در دسترس است.  این مطالعه با هدف مقایسه‌ی اثرات ضدمیکروبی جنیستئین و دایدزئین روی هفت باکتری بیماری‌زای مهم غذایی، شامل اشریشیا کلای O157:H7، لیستریا مونوسیتوژنز، باسیلوس سرئوس، استافیلوکوکوس آرئوس، ویبریو پاراهمولیتیکوس، سالمونلا تایفی موریوم و کرونوباکتر ساکازاکی انجام گرفت.  برای این کار تأثیر غلظت‌های مختلف این دو ترکیب در افزایش مدت زمان فاز تأخیری رشد باکتری‌ها با اندازه‌گیری میزان جذب نوری نمونه‌ها طی مدت 24 ساعت در دمای 35 درجه‌ی سانتی‌گراد مورد ارزیابی قرار گرفت.  نتایج نشان داد که این دو ترکیب تا غلظت 1000 میکرومولار تأثیری در افزایش مدت زمان فاز تأخیری رشد اشریشیا کلای O157:H7 ندارند (05/0P).  این دو ایزوفلاون باعث افزایش معنی‌داری در مدت زمان فاز تأخیری رشد باکتری‌های لیستریا مونوسیتوژنز و ویبریو پاراهمولیتیکوس در غلظت 125 میکرومولار و نیز در مدت زمان فاز تأخیری رشد کرونوباکتر ساکازاکی در غلظت 1000 میکرومولار شدند (05/0>P)؛  بنابراین می‌توان نتیجه گرفت که در صورت استفاده از غلظت 1000 میکرومولار جنیستئین و دایدزئین، فاز تأخیری رشد کلیه باکتری‌های مورد آزمایش، به غیر از اشریشیا کلای O157:H7 ، به طور معنی‌داری افزایش می‌یابد. }, keywords_fa = {جنیستئین,دایدزئین,ایزوفلاون,فاز تأخیری رشد}, url = {https://www.ivj.ir/article_4511.html}, eprint = {https://www.ivj.ir/article_4511_70d17c557d607560321fbc867c321799.pdf} }
